Do ahead Breakfast Quiche

4-6 slices of bread
1 cup cheddar cheese
1 pound sausage (cooked)
12 eggs
1/2 cup green peppers chopped finely
3 green onions including tops finely chopped
1/2 cup milk
3/4 tsp dry mustard
1 can cream of mushroom soup mixed with 1/4 cup milk
sliced mushrooms

Spray with cooking spray a 9 X 13 inch pan. Place the bread on the bottom of the pan cutting some bread in half to make it fit. Sprinkle the cheese over the bread and then sprinkle cooked sausage over the cheese. In a separate bowl, beat the eggs and then add green peppers, onions, milk and dry mustard. Salk and pepper the egg mixture a little. Pour the egg mixture over the bread and refrigerate overnight.

Befor baking, mix 1 can Cream of Mushroom soup with 1/4 cup milk. Pour over top of casserole. Garnish with sliced mushrooms. Bake covered with tin foil on 300 degrees for 90 minutes.

Serves about 10 people
