Sausage and Cheese Quiche

1 egg, well beaten
1 unbaked 10" pie crust
1 c. cooked sausage
1 c. shredded cheese your choice
4 eggs
3/4 c. milk
1/2 t. salt
1/4 t. pepper

Brush beaten egg over surface of unbaked pie crust. Bake at 375 degrees for 10 minutes until golden brown. Remove from oven and layer sausage and cheese on bottom of crush. Combine other ingredients, beating well with wire whisk until smooth. Pour over ingredients in baked crust and return to oven to bake an additional 40-50 minutes until filling is set and lightly browned.
